Yellow coconut rice

Ingredients for two portions
120g jasmine rice
1.2dl fat-free vegetable stock, prepared
1.5dl coconut milk
0.5tsp turmeric, ground
1tsp ginger, fresh
1tbsp cashew nuts
1 lime leaf
salt and pepper to taste


  1. Wash the rice in a bowl in cold water and drain.
  2. Peel and finely grate the ginger.
  3. Bring all the ingredients except the rice to the boil and simmer for approx. 30 minutes.
  4. Add the rice, bring to the boil, switch off the heat, cover and set aside until all the liquid has been absorbed.
  5. Fluff up the rice with a fork and serve.
