Watermelon and feta salad

Simple, delicious and refreshing – it takes just ten minutes to prepare this watermelon and feta salad.

Ingredients for two portions
500g Watermelon
150g Feta (Greek sheep’s cheese)
1 tsp Ginger, fresh
½ bunch Peppermint, fresh
20g Rocket, fresh
1 tbsp White wine vinegar
1 tbsp Olive oil
150g Rye sourdough bread
2 tbsp Pine nuts
Salt and pepper to taste


  1. Dice the watermelon and feta into 2x2cm cubes.
  2. Finely grate the ginger.
  3. Wash the mint and rocket, chop roughly.
  4. Roast the pine nuts without oil.
  5. Combine all ingredients with the olive oil and vinegar. Season everything with salt and pepper to taste.
  6. Slice the bread and serve with the salad.
