Rustic pasta dish

This recipe shows that pasta can be prepared in a very healthy way: with plenty of fresh, colourful and crunchy vegetables.

Ingredients for two portions
200 g wholemeal pasta
1 tsp sesame oil
1 red pepper
1 courgette
1 handful cherry tomatoes
200 g broccoli
basil
1 tbsp crème fraîche
150 ml vegetable stock
salt and pepper

Preparation

  1. Boil the pasta in lightly salted water. Drain the water.
  2. Wash the vegetables and cut them into bit-sized pieces. Wash and chop the basil.
  3. Heat the oil in a pan and sauté the broccoli and courgette for 5 minutes. Then add the rest of the vegetables and vegetable stock. Allow the mixture to simmer for an additional 5 minutes.
  4. Now add the pasta and crème fraîche and combine well. Season with salt and pepper and garnish with basil. Bon appetit!
