Millet-feta burger

Ingredients for four portions
200g Millet
500ml Vegetable stock
1 Leek
1 Egg
2 tbsp fine breadcrumbs
2 tbsp Hazelnuts, ground
0.5 bunch Parsley, finely chopped
1 sprig Rosemary, finely chopped
1 Chilli pod
120g Feta
2 tbsp HOLL rapeseed oil
Salt and pepper to taste

Preparation

  1. Boil the millet in the vegetable stock for 15 minutes until it is soft, then leave to rest for 5-10 minutes and fluff up with a fork
  2. Finely chop the leek and chilli, briefly steam in water adding no fat
  3. Crumble the feta and combine with the millet, leek, parsley, rosemary, egg plus salt and pepper to taste and leave to chill in fridge
  4. Remove the mixture from fridge and form burgers
  5. Combine breadcrumbs and hazelnuts in a deep plate and roll the burgers to coat
  6. Heat HOLL rapeseed oil in a frying pan and fry the burgers until crispy for 5-7 minutes
