Meatballs with mushrooms

Ingredients for eight portions
95g Wholemeal bread
1 Onion, raw
4 tbsp Parsley, finely chopped
50g Porcini mushrooms, soaked
600g Mince (combination of beef, veal, pork or chicken), raw
2 Eggs

Preparation

  1. Finely chop the wholemeal bread, onion and parsley.
  2. Gently squeeze the soaked porcini mushrooms and slice thinly.
  3. Put the mince in a bowl. Add egg, bread, onions, parsley and mushrooms.
  4. Season to taste with salt, pepper, nutmeg, paprika and cumin.
  5. Thoroughly combine to form a consistent mince mixture.
  6. Form small balls and place these on a tray lined with baking paper.
  7. Pre-heat oven to 180°C and cook the meatballs for around 50 minutes.
