Kale with cranberries and soy vinaigrette

Kale, also known as curly kale, contains lots of iron, protein and Vitamin C. Coupled with cranberries, it creates a delicious and healthy side in no time at all.

Ingredients for four to six portions
1kg Kale, fresh
200g Cranberries, dried
3 tbsp Soy sauce, sweet
Salt and pepper to taste

Preparation

  1. Combine kale with cranberries plus seasoning.
  2. Place on a baking tray.
  3. Bake in oven at 180°C for 10 minutes. The kale should brown a little.
  4. Add soy sauce to taste before serving
