Beetroot sandwich

Beetroot is related to sugar beet and is therefore rich in calories for a vegetable. However, this root vegetable is also full of vitamins and minerals.

You can enjoy beetroot raw, cooked or as a juice. Cooked beetroot cubes make for a colourful sandwich with a mildly sweet smell. Find this and other recipes in the Helsana Coach app.

Ingredients for two portions
50g feta
1 handful rocket
4 slices wholemeal bread
1 avocado
½ handful sprouts
2 tbsp cream cheese
1 beetroot (cooked)

Preparation

  1. Spread the cream cheese onto the slices of bread.
  2. Wash the rocket and sprouts. Spoon out the flesh of the avocado and slice it into small pieces. Dice the beetroot.
  3. Top the bread with the beetroot and crumble feta on top. Add a layer of rocket and avocado. Sprinkle the sprouts on top. Put the top on your sandwich and enjoy!
